Hotate from Hokkaido, Japan, at ten to twenty scallops to the pound. They come with no added phosphates and no added water, which is the whole point: the texture and the sweetness are the scallop's own.
Because nothing has been added, they behave the way a scallop should. Sliced thin and served raw they are sweet and clean. In a hot pan they take a deep crust and sear rather than steam, because there is no water in them to give up.
Pat them dry before they meet the pan, keep the heat high and the time short, and leave the middle just translucent.
