About the cut.
An intact Japanese A5 Wagyu New York strip loin from Iwate Prefecture, processed by IWACHIKU Co., Ltd. A5 is the top grade Japan awards, and a loin like this is chosen for its marbling: fine, even threads of fat running through the whole length of the cut.
A whole loin runs a little over three pounds, which is what makes it a kitchen's cut. You decide the steak thickness, the portion for a tasting course, the slices for nigiri, and nothing is cut before it reaches you.
A5 is richer than any steak most people have eaten, so it goes further than its weight suggests. Small portions, a very hot pan, a short sear on each side and a rest before slicing are all it needs.
