The same Japanese A5 Wagyu from Iwate Prefecture, cut to the size you name instead of sold as a whole loin. It is for the service that wants exact pieces: a tasting menu, a steak course, a nigiri course or sashimi-style slices.
Tell us the format in the note, the way you would tell a butcher: how many portions, how heavy, how thick, or how they will be served. It is sold by the ounce, so you pay for the weight you ask for.
Richness is the point of A5, and a little goes a long way. Two to three ounces is a generous tasting portion. Sear it hard and briefly, or slice it thin and serve it barely warmed.
