Bara uni is the loose-packed grade: whole lobes laid into the tray side by side rather than arranged for display. Hirayama packs it in Hokkaido, and we choose it by what it tastes like, not by how neat the rows look.
What we look for is clean sweetness, a creamy texture, low bitterness and lobes that hold together. The best-looking tray is not always the best-tasting tray, so a tray earns its place here on flavor and condition first.
Serve it simply. A spoonful over warm rice, on a piece of nigiri, folded through warm pasta at the last moment, or eaten from the tray. Keep it cold until you open it and enjoy it soon after it arrives.
